If you need to find a freezer pop mold, I have one similar to this that we love. If I make too much smoothie, we always fill up our molds with the leftovers and freeze them for a treat another day. You don't have to be fancy. It can be as simple as freezing fruit juice too. You will save a ton of money and it's a much healthier alternative to high sugar frozen treats from the store.

Lemon Pucker Pistachios

I like snacks. A lot. Please tell me I'm not the only one! A few years ago, I indulged my snack habit and started a subscription with Nature Box. I became obsessed with these Lemon Pucker Pistachios that you could order. I could order 5 bags of snacks and I would often order multiple bags of the pistachios. It's always inevitable that when I love something, they stop making it. I pouted about it, sent tweets to the company, checked back incessantly in hopes that the pistachios would return with no luck.  I have finally come to grips with the fact that the Lemon Pucker Pistachios just might not make it back to the snack rotation at Nature Box, so what's a girl to do but set out to make her own.

I think I got pretty darn close and making them couldn't be easier. If you love pistachios, you will love these lemon flavored ones.

I've tried making these pistachios a few different ways. This is the best recipe. I promise you. You will need:

1 large lemon {about 1/2 cup}
1 small bag {8 ounces} of lightly salted pistachios

Juice your lemon. You will need around 1/2 cup of lemon juice. Fresh lemons are the key! Do not try to use the juice out of those little plastic lemons. It will not taste the same.


Pour the whole bag of you pistachios into a bowl and stir in the lemon juice until all of the pistachios are coated. Set a timer for 5 minutes and let the pistachios soak in the juice. Don't let them soak for too long. This can make them soggy, even after you roast them. While you are letting them soak, turn your oven on to pre-heat at 325 degrees.

After your pistachios have soaked in your lemon juice, pour them on to a non-stick pad {I love these silpat sheets: they make me feel like Martha Stewart and they last forever!} and pop them in the oven for 25 minutes.

Backyard S'mores Bar with Free Printable Gourmet S'mores Menu

I'm kind of a big fan of S'mores. I like dessert of any kind, but if you can make it with toasted marshmallows and melted chocolate, you have got yourself a winner! I picked up a little charcoal grill at a garage sale recently. We haven't had one since we were in college and we found one in the dumpster outside of our first apartment. We have been sold on the gas grill since because the main downside of a charcoal grill is that it takes FOREVER to light and heat up.

The Very Best Fruit Dip made with only 2 Ingredients

I feel like I am just about to divulge a huge family secret. I'm sharing one of our families favorite recipes today. It is a recipe that my mom shared with me and that when ever I serve it at a party or an event I always get asked for it. It's almost too easy that I hate to share it! You are going to die when you find out what two ingredients you probably have in your home right now go to make this fruit dip. It seriously is the very best fruit dip you will ever make. I promise you, it will be a hit with everyone!

Are you ready for it? The very best fruit dip is made with a block of cream cheese and a jar of marshmallow fluff. That's it! I let my cream cheese get to room temperature {otherwise the dip is chunky not smooth} and I whip the two together in my mixer. You want your dip to be nice and fluffy so whip it good.

Our very favorite fruit to dip in the fruit dip is strawberries. 


I usually stock up on marshmallow fluff around Christmas. I can find it at the Dollar Store {yep, you can buy everything at the Dollar Store...even marshmallow fluff!}.

The best Pico De Gallo recipe

If there was one kind of food that I could eat every single day it would be Mexican food. My favorite of course is pico de gallo served with warm chips. I just love all the fresh vegetables and how all of the flavors blend together. It's the best. I'm sharing with you the absolute best pico de gallo recipe that I have found. I have been making it for years and it's by far my favorite! So get your chips ready! You are going to love this!

Pico De Gallo:


3-6 medium tomatoes {depending on how much salsa you want} finely chopped
3/4 cup green pepper finely chopped
1/2 cup onion finely chopped
1/2 cup green onion finely chopped
6 garlic cloves pressed
2 t. cider vinegar
2 t. lemon juice {I freshly squeeze mine}
2 t. vegetable or olive oil
1 to 2 tsp ground cumin
1/2 tsp salt
1/4 to 1/2 tsp cayenne pepper
chopped cilantro
and if you are feeling spicy some chopped jalapeno peppers

Blend all of the ingredients together, cover and refrigerate

I scoop out the pit of a ripe avocado and fit as much pico inside the pit the hole made as I can! It makes for a delicious lunch.

You can serve it on top of tacos. Another favorite of mine! You can find out how we make shredded chicken for Taco Tuesday. It's so easy and can be made in your crock pot for a quick week night meal.

Or, you can put your pico de gallo on top of a bed of rice, black beans and chicken {I love my shredded chicken!} for a yummy protein packed meal.
